Cupcakes have make a resurgence over the past few years to become a favored decorative treat once again. Cupcake shops and bakeries have developed recipes and decorative cupcake arrangements rivaling decorated cakes and replacing other baked treats at parties and on appetizer tables. A cream filled cupcake is similar to the prepackaged filled cakes sold as lunchbox snacks. Cream filled cupcakes can be made from scratch for a healthier version with fewer preservatives. Both the cake and the filling can be made from scratch ingredients, or either one can be made from a package mix. The end result, regardless of scratch versus box mix, is a fun tasty dessert loved by both children and adults.

Easy Cup Cake Recipe from Scratch

Ingredients

  • 1/2 cup Butter - softened
  • 1/2 cup white sugar
  • 1 cup self-rising flour
  • 3 eggs
  • 1 tsp vanilla extract

Directions

  1. Pre-heat the oven to 350 degrees F .
  2. Line pan with cup cake papers.
  3. Beat eggs lightly with a fork.
  4. Beat all ingredients for 2-3 minutes until light and creamy.
  5. Bake for 18-20 minutes until firm.
  6. Allow to cool for a few minutes. Move to wire cooling rack.
  7. Allow to cool fully before filling or icing.
  8. Makes 12

Cream Filling from Scratch

Ingredients

  • 1/4 cup butter
  • 1/4 cup shortening
  • 2 cups powdered sugar
  • salt
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract

Directions

  1. Beat butter and shortening together until smooth.
  2. Blend in powdered sugar and pinch of salt.
  3. Add 3 tablespoons milk, one at a time and 1 teaspoon vanilla. Beat after adding each spoon of milk. Beat until light and fluffy.
  4. Fill a pastry bag with a small tip. Push tip through bottom of paper liner or into the top of the cupcake to fill.

Easy Lemon Cupcakes with Cream Filling

Lemon cupcakes can either consist of a lemon cake with a lemon pudding filling or a white cake with a lemon pudding or custard filling. Both the cake and the cream can be made from box mixes to make these easy cupcake recipes.

Cream Filled Lemon Cupcakes from Cake Mix

Ingredients

  • Lemon cake mix
  • Eggs
  • Water
  • Oil

Directions

  1. Follow cake mix directions for cupcakes.
  2. Quantities for eggs, water, and oil should be determined by the mix
  3. Cool cupcakes completely before filling.

Easy Cream Filling Ingredients

  • 1 Large Box Instant lemon pudding
  • Milk

Directions

  1. Make pudding according to the box directions for pie filling
  2. Amount of milk varies depending on pudding used

Directions for Filling Cupcakes

  1. If a pastry bag is available, pipe pudding into the cupcake.
  2. Otherwise, use a small wooden spoon handle to hollow a hole into the cupcake top, not reaching the bottom of the cake.
  3. Place pudding in freezer bag and cut one corner to allow pudding to be squeezed into cupcake.
  4. Frost over cupcake
  5. Refrigerate finished product
