- 2 tbs butter
- 3 eggs
- 1/2 c. flour
- 1/2 c. milk
- 1/4 tsp. salt
- 1/4 c. jelly

- Preheat oven to 400 degrees.
- Melt butter in a 10 inch cast iron skillet or small round cake pan.
- Beat eggs. Add flour, milk, and salt.
- Stir until smooth. Pour batter into hot skillet.
- Bake for 20-25 min; pancake should be browned
- In a separate saucepan, melt jelly over low heat.
- Cut the large pancake into wedges; cover with fruit pieces and pour topping over all
- Sprinkle with powdered sugar if available.
Veggie Pie
Ingredients
- 1 egg
- 1 cup milk
- 1 cup flour
- 3 cups cooked veggies
- grated cheese
- Mix first three items together
- Pour batter into a buttered pie plate.
- Put in 3 cups cooked veggies in center or plate leaving dough around the edge of the pie plate for the crust.
- Cook in preheated 400 F oven until browned, begin checking at 15 minutes
- Top with grated cheese and put back in oven until cheese is melted.

Macaroni Pie
- 2 cups elbow macaroni
- 2 eggs
- 8 oz cheddar cheese, grated
- 1 can. Evaporated milk
- 1 onion, diced
- salt
- pepper
- Preheat oven to 350 F
- Cook macaroni
- Beat eggs. Add onion, pepper, cheese, salt, pepper, and evaporated milk
- Drain Macaroni and let it cool before adding to cheese mixture.
- Pour mixture into baking dish and bake for 30 to 40 minutes.
- Let stand at least 10 minutes before cutting in order to firm up.
