- 18 eggs

- 1 pound cooked sausage patties

- 1 medium onion, diced
- 1 green pepper, diced
- 1 teaspoon butter
Directions
- Grease crock with butter.
- Layer sausage, chilies, onions, peppers and cheese.
- Repeat layers using rest of ingredients. Top with cheese
- Beat eggs and pour over ingredients in crockpot.
- Cover and turn on low for 7-8 hours.
Ham and Cheese Low Carb Breakfast Casserole
Many omelet combinations can be converted to a breakfast casserole by adding sour cream to eggs for fluffiness. Add or delete ingredients to match the likes and dislikes of those who will be eating. When using packaged meats, check for added sugars or preservatives.
Ingredients
- 12 eggs
- 2 cups sour cream
- 12 oz shredded cheese
- 2 cups chopped ham
- 1 green pepper, diced in small pieces
- 1/4 cup onion, diced
Directions
- Preheat oven to 350 F.
- Saute onion and pepper until soft but not mushy.
- Whisk eggs and sour cream. Add salt and pepper to taste.
- Using a 9X13 pan, layer half the cheese, the ham, and vegetables and then repeat the layer.
- Pour the egg mixture over the dish .
- Bake 1 hour until golden brown, Check for doneness with knife in center of casserole
